Egg Cups

We eat eggs about once a week.  We might have them for a late breakfast on a lazy Saturday or sometimes we make “breakfast for dinner”.  It is usually scrabbled but sometimes we change it up with soft boiled eggs.

I have been seeing eggs made in muffin tins for a while on Pinterest and I thought maybe I will finally get around to trying it for my egg series (this is number 11 if you are counting)!

I almost always have Italian style meatballs in my freezer and use them to make meatball subs or to compliment a spaghetti dinner.  And I always include a colorful salad and whole wheat rolls to keep it healthy.  Another little trick of mine is to cook them a little longer and hotter to cook off much of the fat content and we all like how they get crispy on the outside.  Farm Rich also offers Turkey meatballs.  Try these with pasta or how about on a bulky roll with gravy and cranberry sauce.  Yum!

Hips DO Lie

…on the beach!

These are rose hips from the Rosa Rugosa bush which is native to eastern Asia but loves it here on Cape Cod!  I posted a picture of the fuschia roses that bloom earlier in the summer here.  It is sometimes confused with the Beach Plum which is native to Cape Cod and is sweet enough to be eaten whole.

Rose hips are high in vitamin C and antioxidants and can be used to make teas and jams. If you are lucky enough to have access to some you can find a list of recipes here!

Want to up the love?  Feed him something his mother used to make!

Here is an easy supper from my husband’s mother.  As the story goes, she found this recipe in the newspaper and the only change I made was to add onion.  To me, you can’t have peppers without onions!  It is good comfort food that everyone seems to like!

I Got the Bread

Do you have a bread-maker?  I have had mine for a couple years and I am still amazed by it!  Baking bread seems too complex for a counter-top appliance so I imagine there are little baker elves inside.  I have checked at various stages through the window on top and no elves (unless they hide when they hear me coming).

I tried a few recipes from the booklet that came with the bread-maker and ones I found online.  Over time my bread-making has evolved into one amalgam recipe that is yummy and healthy and now I only make that.   Continue reading

Winter Bog

A vivid childhood memory I have is of digging through bins of old ice skates for a pair that fits, getting bundled up, and driving to a nearby cranberry bog to ice skate on the frozen surface.  Skating on cranberry bogs is a lot safer than skating on ponds because the water isn’t very deep. I prepared such a successful dinner last night I had to share it right away in a tweet!  I am sharing it here for those who might have missed it and including a bit more detail.

I made Lentil soup with sweet Italian sausage and served it with fresh whole grain bread with butter.  What makes this meal great is that it is yummy, relatively healthy, cheap, easy, and super fast!  It cost around $10 to feed a family of 4 and almost all of us enjoyed it.   Continue reading

I made chicken pot-pies for Christmas dinner this year!  My family loves them and it turns out I am the only one who likes spiral ham and I just can’t eat a whole ham myself again this year!  I balance the comfort and decadence of the pie by using all white breast meat and serving with a fresh salad chuck full of a variety of crunch veggies and walnuts and Craisins to make it seasonal.  It is not even that much work when you take advantage of a couple of prepared store bought ingredients and reuse cooking pots and bowls. Lemon-Pepper Chicken & Roasted Rosemary Potatoes

Here is my recipe for lemon-pepper chicken “you only think you don’t like dark meat” thighs with roasted rosemary potatoes.  You can team this meal up with any number of seasonal steamed vegetables.  The reason I say “you only think you don’t like dark meat” is because maybe you have never had it like this!  What’s my secret?  I cook the LIFE out of that chicken at least 3X over!  The result is the perfect crispy skin to meat ratio with only one bone to negotiate and meat with the texture and taste similar to roasted duck.  And the potatoes – they are full of flavor and crispy goodness.  Your whole family AND your pocket-book will love this meal! EZ, no-fail, fall-off-the-bone baby-back ribs!

This is my experience.  I go to a restaurant and the baby-back ribs sound so good!  I order them only to be disappointed because they are tough and often they don’t even taste very good!  It’s so disappointing plus it’s expensive!

Instead enjoy baby-back ribs at home that turn out perfect every time with very little effort! Continue reading
